Matcha is the trendiest go-to coffee shop drink on the market. Since it is essentially powdered green tea and comes with both health benefits and caffeine, it seemed like the perfect match for an Eat Your Coffee Bar!
It might seem a little crazy, but we went for it... We bring you Caffeinated Mini Mocha Matcha Cheesecakes. Yep, you heard that right. They have a delicious mocha base and a creamy matcha cheesecake filling and will be sure to satisfy your sweet-tooth while giving you a double caffeine kick.

Ingredients:
Base:
- Eat Your Coffee Bars (pick your favorite, we used Fudgy Mocha Latte)
Matcha:
- 100g cream cheese
- 25g sugar
- 50mL heavy whipping cream
- 5g matcha powder
- 2.5g gelatin
Cheesecake:
- 100g cream cheese
- 20g sugar
- 50mL heavy cream
- 1/2 tsp lemon juice
- 2.5g gelatin
Chocolate Ganache:
- Chocolate chips
- Heavy whipping cream
Instructions:
- Cut each bar into 2 pieces (you will then have 6 smaller pieces).
- Roll each piece into a 1-inch ball and press into the bottom of the cupcake liners. (Tip: You can do this with your hands similar to how you would make meatballs.)
Matcha:
- Bring water to a boil in a saucepan and place a heat-resistant bowl on top of the pan of simmering water.
- Mix together cream cheese, sugar, and cream in the bowl.
- Mix in matcha powder.
- When mixed completely, add gelatin and mix well.
- Fill the cupcake liners and leave in the fridge for about 2 hours.
Cheesecake:
- Again, bring water to a boil in a saucepan and place a heat-resistant bowl on top of the pan of simmering water.
- Mix cream cheese, sugar, cream, and lemon juice in the bowl.
- When mixed completely, add gelatin and mix well.
- Top the matcha layer with this cheesecake later and leave in the fridge.
Chocolate Ganache:
- Melt the chocolate chips at a low temperature so they don't burn.
- Add heavy cream and stir until smooth and spoon on top of the mini cheesecakes.
- Put back in the refrigerator until the Ganache is firm (about 30 mins).
